Fall Recipe–Potato Soup

Here’s another fall recipe! Phyllis says: “Our fall would not be complete without [this recipe]. It is a hearty soup that reheats well. We make a huge batch and use it for at least two dinners and lunches.”

POTATO SOUP – PHYLLIS SATHER

3 + medium potatoes cubed   – I usually add more than this
1-2 stalks celery chopped
1 onion chopped
2-3 grated carrots
4 cups water
4 cups chicken stock
2 tbs. butter
1 cup milk
2 Tbs. chopped parsley
1 cup Velveeta cheese
Dash pepper
Cubed ham
Cook potatoes, onion, celery, and carrots in water and stock for about 45 minutes. Add cheese, butter,
parsley and ham.
